Quinoa Pale Ale

Quinoa 8 lbs
Water 4.5 gals
Clover Honey 3 lbs
Maltodextrin 4 oz.
Irish Moss 1 tsp
Domestic Cluster Hops 2 oz
Domestic Sterling Hops 2.5 oz
Preheat Oven to 300; toast 6 lbs of quinoa stirring every 5 mins for 1.5 to 2 hours (looking for a nice caramel color). 2 lbs of quinoa left as pale malt.
Mash with 3.5 gallons of water with a strike of 150 deg F; add amalyse enzymzes and leave for 1 hour; Raise temp with 1 gallon of water with a strike temperature of 180 and leave for another hour. Sparged, etc.
Added the following during the boil: 15 mins - 1 tsp Irish Moss; 1/4 lbs rice syrup solids; 1 ounce Sterling Hops 30 mins - 1.5 ounces Sterling Hops 60 mins - 3 lbs clover honey; 4 oz maltodextrin; 2 ounces Cluster hops
Cool and put in fermenter with yeast until fermented.
