Corn Quiche

Corn Quiche made with healthy nutritious teff flour
Serving Size: 8 Servings Prep Time: 20 Minutes Cook Time: 45 Minutes Cooking Temp: 350°F
Ingredients:

Crust Ingredients:

¼ cup water

¼ cup sesame oil

1 cup teff flour

1/8 tsp salt

Filling Ingredients:

2 cups corn kernels

1 cup milk

4 large eggs

1-2 dashes tabasco sauce

¼ tsp salt

4 oz gouda cheese

1 small onion

½ medium pepper green bell pepper

2 cherry tomatoes

Directions:
  1. Chop onion and green pepper and set aside. Thinly slice tomatoes and set aside.
  2. Whisk together water and oil until frothy. Add flour and salt and mix well. Press into oiled 9” pie plate.
  3. Place corn and milk in a blender and blend until smooth. Add eggs, hot sauce and salt.
  4. Sprinkle unbaked crust with cheese and add corn mixture. Sprinkle onion and green pepper over surface of pie and arrange tomato slices around pie. Bake for 45 minutes.
