Ingredients
  • 3 ½ cups oat flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ tsp nutmeg
  • ½ cup chopped pecans optional
  • ¾ cup applesauce
  • ½ cup sugar
  • 2 eggs
  • 2 tsp orange peel finely shredded
  • 1 tsp vanilla
  • 1 cup milk
  • 2 ½ tbsp butter melted
  • 1/3 cup sugar & 3/4 tsp cinnamon mixture
Instructions
  1. Preheat oven to 350°F. Use your Lee Household Flour Mill to grind the oats into flour. Put oat flour into a mixing bowl and add baking powder, salt, nutmeg and pecans. Mix well.

  2. In a separate bowl, mix applesauce, sugar, eggs, orange peel, vanilla and milk. Then combine wet and dry ingredients and mix altogether.

  3. Pour muffin mix into greased muffin tins filling ¾ full and bake 14-18 or until golden brown. While muffins are still warm, dip tops of muffins with melted butter and sprinkle cinnamon sugar mix on top and enjoy these healthy oatmeal muffins!
