Gluten-free Oatmeal Muffins
Servings: 16 muffins
- 3 ½ cups of oat flour
- 1 tbsp baking powder
- ½ tsp salt
- ½ tsp nutmeg
- ½ cup chopped pecans optional
- ¾ cup applesauce
- ½ cup sugar
- 2 eggs
- 2 tsp orange peel finely shredded
- 1 tsp vanilla
- 1 cup milk
- 2 ½ tbsp butter melted
- 1/3 cup sugar & 3/4 tsp cinnamon mixture
1 Preheat oven to 350°F. Use your Lee Household Flour Mill to blend oats until they reach a flour-like consistency. Put oat flour into a mixing bowl and add baking powder, salt, nutmeg and pecans. Mix well.
2 In a separate bowl, mix applesauce, sugar, eggs, orange peel, vanilla and milk. Then combine wet and dry ingredients and mix altogether.
3 Pour muffin mix into greased muffin tins filling ¾ full and bake 14-18 or until golden brown. While muffins are still warm, dip tops of muffins with melted butter and sprinkle cinnamon sugar mix on top and enjoy these healthy oatmeal muffins!
