Preheat oven to 350°F. Use your Lee Household Flour Mill to grind the oats into flour. Put oat flour into a mixing bowl and add baking powder, salt, nutmeg and pecans. Mix well.
In a separate bowl, mix applesauce, sugar, eggs, orange peel, vanilla and milk. Then combine wet and dry ingredients and mix altogether.
Pour muffin mix into greased muffin tins filling ¾ full and bake 14-18 or until golden brown. While muffins are still warm, dip tops of muffins with melted butter and sprinkle cinnamon sugar mix on top and enjoy these healthy oatmeal muffins!
