3 ½ cups of oats
1 tbsp baking powder
½ tsp salt
½ tsp nutmeg
½ cup chopped pecans (optional)
¾ cup applesauce
½ cup sugar
2 tsp orange peel (finely shredded)
1 tsp vanilla
1 cup milk
2 ½ tbsp butter (melted)
1/3 cup sugar & 3/4 tsp cinnamon mixture
- Preheat oven to 350°F. Use your Lee Household Flour Mill to blend oats until they reach a flour-like consistency. Put oat flour into a mixing bowl and add baking powder, salt, nutmeg and pecans. Mix well.
- In a separate bowl, mix applesauce, sugar, eggs, orange peel, vanilla and milk. Then combine wet and dry ingredients and mix altogether.
- Pour muffin mix into greased muffin tins filling ¾ full and bake 14-18 or until golden brown. While muffins are still warm, dip tops of muffins with melted butter and sprinkle cinnamon sugar mix on top and enjoy!
