Buckwheat Soup

Buckwheat Soup Recipe nutritious and low calorie
Serving Size: 8 Bowls Prep Time: 10 Minutes Cook Time: 1 Hour Cooking Temp: Stovetop
Ingredients:

4 quarts water

½ cup buckwheat

1 lb beef or pork (with bone)

1 large carrot

1 small onion;

3 large potatoes

¼ cup parsley or dill

3 bay leaves

Salt and pepper (to taste)

Oil of choice for cooking

Directions:
  1. Place rinsed meat into a pot with water. Bring it to a boil then turn heat to medium. Cook meat in water for at least 40 minutes. Season it with salt. Add buckwheat to pot and cook for 15 minutes.
  2. Dice onion, herb and carrots into small cubes, wash and cook in large skillet with oil until soft and golden brown. Dice potatoes into medium sized pieces and add to pot. Once vegetables are done and to cooking soup as well. Mix well and let all ingredients simmer for 5 minutes.
  3. Top with fresh herbs (dill or parsley) and serve.
