One of the greatest things about white rice flour is that most kitchens have a bag of white rice in the pantry. If you have a Lee Household Flour Mill, you’ll never be at a loss for fresh flour. While many think of rice flour as only used in Asian cooking, it is actually quite versatile.

White rice’s (inexpensive) repertoire includes cookies, cakes, breads, Asian noodles. It can also be used for thickening sauces or as a coating for fried foods. It has a milder flavor than brown rice flour and is more easily digested. It has a low-fat content and is a good source of carbohydrates. Despite it’s lower nutritional content, people enjoy these white rice benefits.

White rice starts out as brown rice. It becomes white after the hull and bran are stripped away. This makes for a faster cooking, lighter rice. After this processing, white rice lacks many of the nutrients in brown rice, so it is “enriched” with vitamins and minerals. However, adding synthetic vitamins cannot compare with the value of these nutrients present in their natural form.

Note: Weight of a cup (or partial cup) of flour varies depending upon whether it is lightly sprinkled into a measuring cup or compacted. Most recipe measurements are based on sifted flour as a way to arrive at more uniform measurement.

White Rice Flour with a Home Flour Mill

Rice is one of the tougher grains and can present a challenge if you are not using a Lee Household Flour Mill.

The best advice is to mill only as much flour as you need for a given recipe. However, if you have extra you can store it in an airtight container to keep it from getting moldy if stored in the pantry. An airtight container also keeps it from absorbing moisture and odor if stored in the refrigerator or freezer. White rice flour can last for years if properly stored.

Gluten Content & Allergen Information

Rice is a gluten-free grain. Flour milled from it is an excellent choice for anyone with gluten intolerance or Celiac disease. There are, however, many individuals who have rice allergies. These allergic reactions can be extreme—to the point of causing the tongue and through to swell up dangerously.

Although white rice flour is naturally gluten-free, it can become contaminated with wheat during processing. Be sure to only buy grains marked as gluten-free.
