Soft White Winter Wheat

Richer in complex carbohydrates than hard white winter wheat flour, soft white winter wheat is used to bake with a variety of goods.

In the United States, winter white wheat is planted in the fall and harvested in late spring or early summer. Soft wheat winter wheat flours tend to have the least gluten of all whole wheat flours, though no wheat flour is suitable for someone with celiac disease. Winter wheat is often higher in minerals than its spring counterpart. Winter wheat is also significantly more common, comprising somewhere around 75% of America’s annual harvest.

Soft white winter wheat berries make an excellent addition to any home flour miller’s arsenal. Assuming they are stored in a cool dry location (50 degrees Fahrenheit) they can last up to 20 years (the warmer the temperature, the shorter the shelf life). Consider using an airtight bucket for storage.

Soft white winter wheat has high levels of protein and 50% of your daily value of Iron per 1 cup serving. High in fiber and other important minerals such as Phosphorus and Manganese, this type of hard wheat is excellent for use in bread and other baked goods. This type of wheat is also low in saturated fat, cholesterol and sodium levels.

Note: Weight of a cup (or partial cup) of flour varies depending upon whether it is lightly sprinkled into a measuring cup or compacted. Most recipe measurements are based on sifted flour as a way to arrive at more uniform measurement.
